Olivia entered the licensed trade in 2014 with the acquisition of her first public house and has since developed a growing portfolio of both leasehold and freehold venues. Focused on the modernisation and repositioning of traditional pubs, Olivia specialises in transforming underutilised sites into high-performing, experience-led venues with diversified revenue streams. Her approach combines creative branding, strategic refurbishment and operational innovation to deliver commercially successful hospitality destinations. Specialisation: • Extensive refurbishments (averaging £150k–£400k per site) • Repositioning traditional pubs into modern, high-footfall venues • Integration of franchised food brands and entertainment concepts • Current Portfolio Highlights: ○ Brondes Age (Kilburn): Completed an extensive £400k refurbishment, repositioning the venue into a high-footfall flagship site. ○ Phoenix (Camden): Following a full-scale refurbishment, the venue now operates as a contemporary craft beer-led destination near KOKO, with progressive entertainment concepts. ○ The Dome (Watford) & The Shawl (Harlesden): Acquired long leasehold interests in 2025, with a strategic focus on community engagement, live sport and entertainment-led growth. • Expansion: Olivia continues to actively pursue new acquisition opportunities and is currently in negotiations on additional public houses as part of her ongoing expansion strategy into 2026.
